Growing Conditions
The western Corquín region provides ideal conditions for specialty coffee production. The high altitudes ranging from 1,200 to 1,800 meters above sea level, combined with adequate rainfall and optimal temperatures, create the perfect microclimate for cultivating sweet, dense coffee cherries.

Processing & Quality Standards

Selective Harvesting
Coffee cherries are hand-picked by experienced farmers who select only the ripest fruit. This selective harvesting ensures optimal sugar content and flavor development.
Fully Washed Processing
At the cooperative's wet mill, cherries are visually sorted and pulped. The beans undergo controlled fermentation followed by thorough washing in clean water to remove all fruit residue.
Sun Drying
Coffee is laid on patios for initial predrying, where workers carefully inspect and remove any damaged beans. This traditional method allows for optimal flavor development.
Mechanical Drying
Parchment is finished in mechanical dryers that slowly reduce moisture to precisely 12% over 33-35 hours, ensuring stability and preventing defects.
Quality Control
Finished parchment is stored in temperature-controlled rooms until export preparation, maintaining optimal conditions for quality preservation.
